Vegetable hamburger

Carrot-sweet potato hamburger

Our new recipe for human consumption is a vegetable hamburger, i.e., a carrot-sweet potato hamburger.

Ingredients

Hamburger buns

Tangzhong

  • 190 ml milk
  • 50 g flour
  • 500 g flour
  • 7 g instant yeast
  • 1 tbsp. sugar
  • 2 tsp. salt
  • 1egg
  • 1 dl lukewarm milk
  • 0,5 dl vegetable oil
  • 1 egg for greasing
  • sesame seeds for sprinkling

  • 4 carrots·        
  • 1 sweet potato·     
  • 1 potato·        
  • 2 medium onions·        
  • 2 cloves of garlic·        
  • 1 egg·        
  • 6 tbsp. flour·        
  • 2 handfuls of oatmeal·        
  • salt to taste (1 tsp.)·        
  • pepper to taste ·        
  • vegetable oil

Hamburger sauce

  • mustard to taste
  • ketchup to taste

Other ingredients

  • 1 red onion
  • tomato
  • snake cucumber
  • purple cabbage

Step-by-Step Instructions

Hamburger buns

  1. For the tangzhong, mix the flour and milk in a saucepan until there are no lumps! Cook, stirring constantly, until it thickens, then let it cool.
  2. Put the flour, salt and sugar in a large bowl and mix well.
  3. Add the instant yeast and mix well with the flour mixture!
  4. Add the tangzhong, egg, milk and oil to the flour mixture!
  5. Knead the dough, then let it rise for approx. 1.5-2 hours!
  6. Divide the dough into 6 equal parts!
  7. Shape the hamburger buns (the edges of the dough balls must be folded in towards the middle)!
  8. Put the hamburger buns in a baking tray lined with baking paper, then cover them with a kitchen towel and leave them to rise for another 1 hour!
  9. Brush the top of the buns with the egg!
  10. Sprinkle the top of the buns with sesame seeds!
  11. Bake the hamburger buns in an oven preheated to 200 degrees Celsius for approx. 18-20 minutes! (bottom-top baking mode)

Carrot-sweet potato hamburger patties

  1. Cut the red onion into small cubes, then steam them on a little cooking oil.
  2. Grate the cleaned carrots, sweet potatoes, potatoes (500 g in total) and garlic cloves into a larger bowl!
  3. Add the flour, oatmeal, and then the egg!
  4. Season to taste with salt and pepper, then thoroughly mix the contents of the entire bowl!
  5. Let the vegetable mixture stand for approx. for 10-15 minutes!
  6. Divide the vegetable mixture into 9 equal parts, then shape them into dumplings!
  7. Put the dumplings in a baking tray lined with baking paper, then flatten them into a disc shape with your palm!
  8. Bake the vegetable patties in an oven preheated to 200 degrees Celsius for 15-18 minutes! (bottom-top baking mode)

Hamburger sauce

  1. Mix the mustard and ketchup in a bowl! (Optional, you can layer it separately on the hamburger to your taste.)

Making the hamburger

  1. Cut the vegetables into rings!
  2. Cut the hamburger buns in half (and grill them slightly with the inside facing up)!
  3. Put purple cabbage on the lower half of the hamburger bun, then put some of the sauce on it as well!
  4. Put onion and cucumber rings on the sauce!
  5. Put  the carrot-sweet potato hamburger patties on top of the vegetables!
  6. Put tomato rings on the vegetable patty!
  7. Put a purple cabbage leaf on it, then put the top of the hamburger bun on it!
